
Cooking With Candy

It’s hard to believe that prior to the middle of March I cooked once a week – sometimes twice. With a very busy work schedule, it just made life much easier to eat out – not for the fine dining experience, but simply for the convenience of having a good meal quickly and with minimal effort…our fridge was never loaded as it is now and I have never ever cooked so much!
Truth be told, I don’t mind all this cooking. Since I am working from home, it is way easier to find the time to prep food and we are making some really yummy things…last night as we were enjoying grilled salmon and roasted vegetables with a glass of wine, I told Peter that the only difference between our meal and if we had been in a Boston restaurant was that I would be more dressed up. đ
Here are two easy, healthy things to cook:
Roasted Vegetables – Every other day I roast veggies, usually choose two or three at a time…broccoli, cauliflower, brussel sprouts, squash, carrots, mushrooms…preheat oven to 450. Chop veggies (one type at a time) into chunky bitesize pieces, then place in a bowl. Drizzle with 1T canola oil, sprinkle with salt, pepper, and if you like spicy, crushed red pepper. Mix it up with your hands then place on foil lined baking sheet. Bake for about 30minutes or until charred. Great side dish and wonderful to have leftovers for next day snacking.

And for a yummy meal….
Fish Stew
1.5 lbs cod or other white fish
1 green pepper
1 cup mushrooms
28 oz can stewed tomatoes
1 onion
2 cans minced clams (with the juice)
Seasonings: Worcestershire sauce, sugar, basil (all about 1/2 teaspoon) If you like it spicy (we do), add crushed red pepper and/or Tabasco sauce to taste.
Chop all the veggies coarsely, cook in 1T canola oil until beginning to get soft. Then add the tomatoes and simmer for 20 minutes. Chop the fish in chunks, add to the pot. Add the clams, the seasonings, and a swig of white wine. Let cook on low heat for another 20 minutes.
Super healthy and very low in carbs!

I started this while on a family Zoom call at 5:30 pm…it was finished by 6:30…quick and yummy!

My kitchen has been a busy place indeed! Lots of new dishes as I am reading cookbooks that havenât been looked at in years. Made Sante Fe stuffed peppers the other day. On board for upcoming week Cacio de Pepe, Carbonara, even some tuna melts. I roasted large garlic bulbs in the pan with a roast chicken the other day. None of this has beenna chore, itâs been fun!
Yummy, your house must smell amazing! Eat,snack,drink, sleep, repeat! đ
