
Time For Lunch!
Don’t know about you, but once the day at home gets started, I look forward to routine snack times, and get pretty darn excited when I see the clock approaching 12pm! Yay! Time for lunch! What will it be today???
Must be healthy. Must be tasty. Must not take too much time to prepare. Not always easy to get all three requirements, but it is possible. In my ancient recipe box I dug out a recipe for a tuna salad that I used to make when my children were young…it was especially good on a hot summer day when you didn’t want to heat up the kitchen by turning on the oven…it takes all of 15 minutes to prepare and it’s even better the next day. Hope you enjoy!
Tuscan Tuna and White Bean Salad
3T extra virgin olive oil
3T fresh lemon juice
2 cloves minced garlic (I buy pre-minced in jar)
2 tsp dried rosemary
1 15oz can white beans, drained and rinsed
2 tomatoes, chopped
1/3 c chopped flat parsley
1 12oz can solid white tuna in water, drained and flaked
Whisk together olive oil, lemon juice, garlic and rosemary in small bowl. Add beans, tomatoes and parsley, toss together. Gently stir in tuna. Serve on a bed of mixed greens, or lettuce of your choice.

It is high in protein, low in carbs and calories, makes 5-6 servings. My son and husband both love it, so it’s not just a ‘ladies lunch’. 😉

I try to eat salads most days for lunch. I never get board of them and it helps keep calories under control. My mom used to make egg salad for me. I may see if I can remember how she did it.
Yummy, I love egg salad, but if I remember correctly, it takes more than two eggs to make a decent serving size. Would love to see your recipe!
